PESTO REVISITED. This is a fairly classic recipe, but a friend who took a cookery course gave us this variation, which I tried to make again yesterday…. Not for dieters!!! 😀 I cut the potatoes into small pieces and boiled them, then I added some filleted courgettes; I mixed everything with olive oil, some garlic, toasted almonds and pine nuts, plenty of fresh basil and mint, and a lot of pecorino cheese! Then I ‘diluted’ the mixture with the pasta cooking water to make it more liquid… Et voila, a million calories but no regrets!!! 😀
